Hearthstone Kitchen & Cellar’s Chef Donald Thompson is Springing Into the Season With New Elevated Menu Items!

Red Rock Casino Resort & Spa’s premier restaurant Hearthstone Kitchen & Cellar, has added some carefully curated dishes by Executive Chef Donald Thompson. The outdoor patio is the perfect place to sip and savor the new flavors on balmy warm days.

“I learned my food through classic training and my time as sous chef at Guy Savoy at Caesar’s Palace and many business aspects through my years in various venues … especially my years at the Cheese Cake Factory,” said veteran chef of over 23 years, Chef Donald Thompson. “What fascinates me is the deep roots of BBQ and classic French fine dining. We have the beautiful charcuterie board and the wood-burning ovens where we can smoke things. I love what we have on the menu, and I have a creative influence on seasonal dishes and daily specials. I come up with ideas, and then they are approved by our corporate executive chef,” added Thompson.

Begin with a refreshing touch of spring with the roasted beet salad dotted with honey goat cheese and pistachios, lending an excellent textural component. Try the hearth roasted miso-glazed Scottish Salmon cooked in the wood-burning oven with a soy-honey reduction alongside charred sugar snap peas and delicate pea tendrils for a fish dish. The 32-oz dry-aged Tomahawk is a showstopper, carved tableside and plated with vibrantly fresh sauteed asparagus spears and decadent garlic whipped mashed potatoes. Pair your meal with a well-appointed wine list, carefully crafted cocktails, or a refreshing craft beer.

Don’t forget to dive into a decadent dessert. The Seasonal Spring Bread Pudding comprises strawberry/rhubarb donut bread pudding, shortbread crumble, and white chocolate crème anglaise.
