Executive Chef Raj Dixit Takes the Helm at Michael Mina at Bellagio Las Vegas

Chef Michael Mina’s namesake MICHAEL MINA at the Bellagio Resort in Las Vegas has consistently been at the very top of the city’s dining crown for many years. Guests enjoy elegant, globally-inspired seafood providing an authentic international dining experience.
Recently, Chef Raj Dixit from Michael Mina San Franciso has taken the helm of the renowned restaurant in Las Vegas. The experience featured modern techniques and worldwide culinary influences that he has infused into the dining experience at Michael Mina’s flagship restaurant. Attending an exclusive preview dinner in their private dining room was an honor to meet Chef Raj Dixit as he prepared a multi-course menu.
Chef Raj Dixit
Classically trained at the Culinary Institute of America in Hyde Park, New York, Chef Raj Dixit has worked in several top kitchens across Europe and the United States. His culinary journey as an executive chef includes stints at the Inn at Dos Brisas in Dana Point and the St. Regis Monarch Beach. Beginning in 2012 with the Mina Group, Dixit, in partnership with Chef Michael Mina, focused on his culinary creativity while honoring Chef Mina’s seafood-centric menu of the Michelin-starred San Francisco restaurant before taking on the Executive Chef role at Bellagio.
Cherrystone Clams Casino at Michael Mina
An excellent way to begin is the Cherrystone Clams Casino. This exquisite dish featuring horseradish and caviar is a must. Moving on, Dixit outdoes himself with a Duo of Kona Kanpachi Crudo and Kabayaki Collar with white soy, yuzu, and a lovely Kabayaki grilled black truffle “snowball” on the side. On the lighter side, why not indulge in the Dover Sole Grenobloise? Capers, raisin, madras curry, and beurre noisette provide layers of flavor that jump off the plate when accompanied by a soft, warm Parker House Roll with seaweed butter. San Francisco Style Cioppino with Dungeness Crabmeat, Ft. Bragg Uni Roll, and a sourdough crouton provide an authentic San Francisco experience. For an exceptional FINI, Lemon Citrus Custard with tangy candied lemon peel and white chocolate send you off with a satisfied smile on your face.
